Gluten Free Keto Pancakes
While visiting my friend Mary Ann in St. Louis for a few weeks, we decided to do the Keto diet together. It’s always easier to attempt a diet when you have someone doing it along with you, to keep you company and hold you accountable. My friend Lili from San Francisco sent me the recipe for these Gluten Free Keto Pancakes which she made when I visited her a few weeks earlier. The pancakes along with whipped cream, topped with a compote I experimented with using monk fruit sweetener and chia seeds to thicken, were delicious!!!

Gluten Free Keto Pancakes

1/2 cup + tablespoon of Almond Flour
1/2 cup cream cheese
1/2 tsp keto sweetener
4 eggs
1/2 tsp Cinnamon (or Vanilla or Lemon Rind)
Blueberry Compote
___________________
2 cups blueberries
1/2 cup water
2 tablespoons lemon juice
3 tablespoons chia seeds
Sweeten as desired with sweetener
Bring to a boil and then simmer on medium heat for about 20 mins
Homemade Whipped cream
____________________________
Heavy cream/35% Cream
Keto sweetener of choice
Using hand mixer at high speed mix to desired consistency
